These just melt in your mouth. As close as I have found to the fish tacos served at beach-side stands in my home town (San Diego)
Baja California Fish Tacos
(serves 2)
12 oz. boneless mahi mahi fillets (fresh or frozen)
3 tbsp olive oil
½ tsp garlic salt
½ tsp black pepper
6 tbsp Lime juice
1/3 c. mayonnaise
2/3 c. sour cream
1 tsp cilantro
1 c. shredded romaine lettuce
4-6 warmed flour tortillas
Dice mahi mahi into ½ - ¾ inch cubes and put into a bowl. Add garlic salt, black pepper and ~2 tbsp lime juice and toss to mix. Let sit to marinate 10 mins. Heat olive oil in frying pan, add mahi mahi cubes and sauté, turning to cook on all sides (I use two forks to turn). Fish is done when it flakes a bit with fork.
For lime-cilantro taco sauce:
Mix mayonnaise, sour cream, cilantro, and 2 or more tbsp of lime juice to taste. Should be tart, but not sour.
Assemble fish tacos with mahi mahi cubes, lime-cilantro taco sauce and shredded romaine into warm soft tortillas.

p.s. I have seen recipes with tilapia fillets, but don’t substitute … doesn’t hold a candle to the mahi mahi.
