Tweetie is, hands down, the best iPhone Twitter client. And Birdhouse is a wonderful companion to any Twitter client, if you take the craft of writing tweets seriously. It lets you write and revise your snippets of wisdom and then publish them when you're ready. Facebook is an app I use but can't really recommend right now. Unlike the Facebook site, which has undergone significant interface changes and enhanced usability, this app has remained stagnant. Trying to use it feels very clunky and outmoded. However, Facebook has promised us a new app due out soon (no idea when though) which will be much improved. We'll see.
Moving on...Subnet Calc is a very handy app if you can't subnet in your head like me. The interface is perfect and easy to use. Convertbot is pretty much the premier converting app which has a sleek and inventive interface. Delivery Status is absolutely indispensable if you order a lot of crap online like we do. It tracks packages from any major shipper, in addition to retailers like Apple and Amazon. And the best part is they also have a Dashboard widget available, and it syncs your tracked packages to and from the iPhone app. It's really awesome.
I also use Amazon Mobile quite a bit, very handy for checking prices on the fly, like if you're at a store or something. You get full access to pretty much Amazon has to offer, including photos, descriptions, reviews, etc. You can also buy from the store once you sign in. I have to make sure 1-Click is turned off though or I will buy way too much. Similarly, the eBay Mobile app is also really nice if you eBay a lot. Same goes for the PayPal app.
Air Sharing will turn your phone into a little WebDAV client, allowing you to transfer files over the network. Use it to keep files you need on hand, or in place of a thumb drive.
It's not an app, but be sure and check out the iPhone Help Center, they have profiles you can download and install to enable tethering and info on how to set up MMS. On T-Mobile I can tether and send/receive MMS, it's great.
And if you're jailbroken, there's plenty of great stuff in Cydia. MobileTerminal is a must, I love being able to SSH from my phone. The other day at dinner I was able to log in and flush the mail queue. Ultrasn0w is pretty much necessary if you want to unlock and use outside of AT&T's network (I'm on T-Mobile). Cycorder gives you video recording (unless you've got a 3GS and already have video recording). And if you have Air Sharing you can make a symlink to the video folder from inside Air Sharing's folder, giving you quick access to the video files. Finally Winterboard is great for customizing your phone's look and feel, there's all kinds of themes you can download as well. I'm currently rocking this minimalist look with the icon names turned off, transparent dock, and page dots removed. I also have a custom T-Mobile logo for the carrier name.

Thanks guys. Russ I'lll definitely be downloading Subnet Calc and Convertbot. I found a handy dandy little free app called MyBattery. It displays your battery life in hours and minutes in these categores (although I'm not totally sure as to its accuracy):

Russ what did you use to capture that display?
Edit: Oh and my ass is currently owned by Amazon and iTunes due to my Kindle and iPhone
