I guess I could pan fry it in some infused garlic olive oil. Potato wedges and steamed cauliflower and broccoli?

I took the chop and dusted it with pepper, sea salt and a little lemon juice. I tossed it in a hot pan of garlic infused olive oil. I seared both sides and then added finely diced vidalia onion and diced potatoes. I love garlic so I finely diced a garlic clove and laid it lovingly on the top of the chop. It looked a bit drab in the pan so I tossed in a smattering of diced tomatoes and topped that with a few sliced jalapenos.
I may have over done it, but it smells like heaven. I'm letting it cook for 15 minutes. then I'm gonna toss a bag of veggies in the nuker to steam

If I had two lambies, you would have been the first person I would invite. However, you don't like my dogs.
It was good. I can't say the tastes complemented each other, but the lamb chop got tender and the jalapenos made it HOT!
