I cooked a whole chicken in my crock pot...had a meal off of that. Then I got all the meat off of the bone and saved the juices. I was going to buy frozen dumplins at WalMart, but was too lazy to go. So I made my own dumplins:
Dumplings: Place flour in a large bowl and make a well in the middle. Add milk and vegetable oil. Stir to make a firm dough. Knead dough a few times until dough is no longer sticky. Add more flour, if necessary.
Roll out dough on a floured surface and cut into strips. Drop dough into broth. Stir frequently. More water may be added to make a larger quantity without diluting flavor. Add salt and pepper to taste.

Glad the chicken and dumplings came out well for you. My mom used to make that all the time. To this day, nothing compares to mom's homemade chicken and dumplings. You just can't buy homemade in a restaurant.
